How to Use a Bamboo Steamer for Dumplings

Bamboo steamers might initially appear to be just a decorative cooking tool, seeming more for presentation than something you actually need – that is, until you find yourself using it every other day. Traditionally used in Chinese cooking, it is great for steaming vegetables, baos, and our favorite: dumplings. Nothing compares to steaming a batch right at home to get those restaurant-quality dumplings. There are a few different methods for mastering how to use bamboo steamer baskets for making dumplings, and we have prepared a guide for you below.

What Is a Bamboo Steamer?

A bamboo steamer is, as the name suggests, made with thick woven straws of bamboo, consisting of (typically two) interlocking baskets that stack on top of each other, plus a snugly fitted lid. They allow the steam to rise gently through open ridges at the bottom, up through the stacked layers, infusing food with flavor without the need for oil or butter — making it delicious and healthy. 

Learning how to use bamboo steamer baskets is much easier than metal or electric steamers. The bamboo absorbs moisture, thus controlling the humidity and preventing crunchy food from becoming mushy. They are relatively cheaper, more lightweight, and, of course, eco-friendlier.

Step-By-Step Guide on Cooking Dumplings in Bamboo Steamers

Step 1: Fill Your Pan With Water

The first step in learning
how to use bamboo steamer baskets is positioning them correctly. Place it into a wok or a wide, shallow pan. Fill it with enough water to come up about a quarter to half an inch above the bottom rim. If you use a pot, ensure the steamer fits on top without slipping in. This set-up keeps it from scorching when you bring the water to a boil, while ensuring the water does not touch the dumplings and make them soggy.

Step 2: Line the Bamboo Steamer

Once you have your water level set, it is time to line your steamer. Use lettuce, cheesecloth, parchment paper, or reusable silicone liners. If you are feeling fancy, you can also use Napa cabbage leaves. Always leave at least an inch between each dumpling when placing them on top of the lined steamer since they will increase in size as they steam. 

Step 4: Let the Dumplings Steam

Cover the steamer and let the dumplings steam for around 10 minutes. However, the exact cooking time depends on the size of the dumplings and how close the steamer is to the heat. Keep an eye throughout and add boiling water as needed to maintain the water level. Just do not add cold water, as it will disrupt the cooking process. Step 5: Serve the Dumplings Hot

Tips on Using Bamboo Steamers

  • If you are learning how to use bamboo steamer baskets for the first time, you should soak the bottom rim (that will come in contact with the wok) in lukewarm water for about 30 minutes so it does not get burned. 
  • After you are done using it, make sure it is fully dry to prevent mold growth. 
  • If you use frozen dumplings, you do not need to thaw them; just directly place them in your bamboo steamer.
  • An often-overlooked step in learning how to use bamboo steamer baskets is cleaning them properly. They are not dishwasher-safe, so you must apply a mild dish soap and give it a quick scrub under hot water. 
  • If you live in a dry climate, applying a thin layer of vegetable oil can help keep the steamer from cracking or splintering.
