Ingredients
For the Chicken:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp soy sauce
- 1 tsp Shaoxing wine (or dry sherry)
- 1 tsp cornstarch
For the Sauce:
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce (for color and depth)
- 1 tbsp rice vinegar
- 1 tbsp Sichuan chili oil (adjust for spice level)
- 1 tbsp honey (or sugar)
- ½ cup chicken broth
- 1 tsp cornstarch (dissolved in 2 tbsp water)
For Stir-Frying:
- 2 tbsp neutral oil (like canola or peanut oil)
- 1 tbsp Sichuan peppercorns, lightly crushed
- 6 dried red chilies, broken into halves
- 1-inch ginger, julienned
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 scallion, chopped (for garnish)
- Toasted sesame seeds (optional, for garnish)
Instructions
- Marinate the Chicken – In a bowl, combine chicken with soy sauce, Shaoxing wine, and cornstarch. Let it rest for at least 15 minutes.

Prepare the Sauce – In a small bowl, whisk together all the sauce ingredients. Set aside.
- Toast the Sichuan Peppercorns – Heat a dry pan over medium heat, then add the Sichuan peppercorns. Toast for about 30 seconds until fragrant. Remove and set aside.
